The specification of extra virgin olive oil production DOP “Umbria Colli Assisi-Spoleto” provides that the varietal composition of this product is as follows:
• Moraiolo, typical and characteristic variety of Umbria, in not less than 60%;
• Frantoio and Leccino, alone or together, not more than 30%;
• other varieties in a proportion of less than 10%.
Frantoi Aperti (Open Presses) is an event that was created to promote the culture of Extra Virgin Olive Oil Denomination of Protected Origin “Umbria” in union with the traditional agricultural food production and linked to the territory.

The area in which lies the Park is affected by the extra-virgin Olive Oil Road DOP “Umbria”. This road is one of the specially marked routes through places of great historical and cultural interest and a strong vocation regarding the production of olive oil, including also visits inside olive groves and oil mills open to the public. This helps to satisfy the needs of new types of tourists, precisely, the elaioturisti (oil tourists) and the gastronomic tourism enthusiasts.
